Grandma's Pinto Beans From Scratch Recipe
I made this as part of our St.Patrick's Day meal this year. I called it the "pot of gold". This was my husband's favorite meal growing up. I had to ask his mom how to make it - and it is simple.
You will need:
2 cups dried pinto bean - rinsed
Bacon or ham
Water
Salt
Soak 2 cups of washed/rinsed dried pinto beans over night with enough water to cover them. If you forget to soak them over night you can boil them for three minutes. Rinse the beans after the soak or boil.
Put in a large pot. Cover with plenty of water. I make sure the water is an inch or so over the beans - but you need to watch to make sure the beans have plenty of water while they cook. Add desired amount of ham or bacon. I put in four slices of back bacon. Bring to a boil, then simmer on low for 3-4 hours. Add salt to taste during the last hour of cooking. Stir occasionally, and make sure the beans have enough water. The last time I cooked this added about 1/4 cup of molasses when I added the salt. Cook up some rice, make some coleslaw and buns and you have a tasty and inexpensive meal.

ReplyDeleteHi Nancy! Thank you for your comment - boy am I slow to respond. The molasses makes the sauce a little thicker and gives it sort of a sweet flavour. It is also good for you! Do not add too much though as it will be too rich.
